Pour hot water into the teapot and wait 60 seconds for the tea to infuse.
If you shake the teapot, the light blue will become darker,
The sweetness is slightly reduced, making the tea slightly astringent.

Pour it in order so that the concentration is uniform, and pour it carefully until the last drop.

Move the lid of the teapot for the second brew
After pouring the first infusion, hold the handle of the teapot with your left hand and tap the bottom of the teapot lightly to release the tea leaves that have gathered on the mesh on the spout side.
By placing the lid aside, the heat inside the teapot is released, preventing the tea leaves from becoming too stuffy and allowing the second brew to be brewed deliciously.

Cool the water
Warm only the teapot and hot water with hot water. Pour hot water for the number of people into the Yuzamashi and let it cool to 50-60℃.
As a guideline, you should be able to wrap it with both hands and feel comfortable.

The amount of hot water should be enough to soak the tea leaves.
Add 4g of tea leaves for each person. When you are alone, take about 5g, which is a little more.
Pour the amount of hot water into the teapot so that the tea leaves are slightly covered. Cover the teapot and let it steam for about 3 minutes without shaking.

Carefully to the last drop
After 3 minutes, add all the hot water in order so that the concentration is uniform, and carefully pour it down to the last drop.
For the second brew, pour cold water and let it steam for about 30 seconds.
